Scrape down the bowl partway through. Add the flour and mix slowly until combined. Make sure to scrape down the sides and check for powdery flour in the mixture. Once mixed, form into 1 inch balls (28 cookies), and make an impression in the center of the cookies with your thumb. Fill the cookies with 1/4 tsp of jam. I recommend something tart like blackberry, raspberry, curd, or marmalade. I don't recommend strawberry jam as it's too sweet. Bake at 350 degrees for 8-10 minutes. The cookies will turn from shiny to matte when they are cooked. Remove from the oven and cool completely on the pan. Make the glaze with the the powdered sugar, extract, and water. The glaze should be the consistency to drizzle over top of the cookies. 1 sweet onion, diced<br />
a few carrots, peeled and chopped<br />
2-3 cloves garlic, minced<br />
1.5 potatoes, peeled and chopped<br />
1 pound ham, diced<br />
4 oz kale, stemmed and chopped<br />
1 tsp celery seed<br />
1 T dried chives<br />
1 tsp thyme<br />
6 cups chicken broth<br />

Parmesan cheese<br />

Heat some olive oil in your pressure cooker. Add in the onion, carrot, and some salt and saute until the onion is translucent. Add in the garlic and heat for about a minute. Add in the rest of the ingredients except the cheese, and put the pressure cooker on high for five minutes. Do a quick pressure release, ladle the soup into bowls and top with freshly-grated cheese.<br />

This past summer I was invited to help in said kitchen, and I had the opportunity to eat some amazing food, including, drum roll please: Camp Granola. Salted Honey Granola sounds better to a layman, but anyone who has been to camp would start drooling immediately at the mention of Camp Granola. People FREAK OUT over the stuff. I personally ate it every single day--with fresh fruit and yogurt if you are interested. People fight to see who will take home bags of leftovers. It's a big deal. And since I had an inside connection, I managed to get the recipe and make it for myself. Some notes on how to succeed with the recipe. Use parchment paper to line the pan if you value your sanity. You need a high quality pan, I suggest a half sheet pan (USA Pan makes a great one) because it will fit the entire batch of granola. Thin pans may lead to burnt granola. Don't put the pan too near the edges of the oven, or it could burn. Check it more frequently towards the end, because of that burning thing I keep mentioning. If you want big chunks of granola, let it cool in a large mass, but spread it out if you want smaller pieces. It's very simple, but VERY, VERY DELICIOUS.<br />

Ingredients:<br />
1/2 cup olive oil<br />
3/4 cup honey<br />
1/2 cup brown sugar<br />
1 tsp kosher salt (halve that for table salt)<br />
3 cups old-fashioned oats<br />
1 cup mix ins (I like half coconut and half quinoa)<br />

Instructions:<br />
Pour first four ingredients into a bowl and mix well. Add oats and mix ins and stir again. Pour granola onto a pan lined completely with parchment paper. Bake at 300 degrees for about 45 minutes, stirring every 10-15 minutes, but check more frequently at the end. In the beginning the granola will be wet and pale. Towards the end of baking, it will turn golden and start to be gooey and sticky. It will get crunchy as it dries. Remove the granola from the oven. Sprinkle more salt over top to taste. You can cool it in the pan or spread it on a larger sheet of parchment paper if you don't want it in large chunks. Allow it to cool completely, then store it in an airtight container. <br />
